Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 package (16 ounces) potato gnocchi
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup grated Parmesan cheese
Instructions
1. Cook the Sausage Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned and fully cooked, breaking it into small pieces as it cooks.
2. Sauté the Vegetables Add the onion, carrots and celery to the pot and cook for 5–7 minutes, until the vegetables begin to soften. Stir in the garlic and cook for another minute.
3. Add the Broth and Seasonings Pour in the chicken broth and add the Italian seasoning, salt and black pepper. Bring the soup to a gentle boil, then reduce the heat and simmer for about 10 minutes.
4. Cook the Gnocchi Stir in the gnocchi and cook according to the package directions, usually about 3–5 minutes, until the gnocchi are tender and float to the surface.
5. Make It Creamy Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Simmer for 2–3 minutes, stirring occasionally, until the soup is creamy and the cheese has melted.
6. Add the Spinach and Serve
