Ingredients
- Fresh fruit (strawberries, grapes, blueberries, mandarin segments, etc.)
- 1 cup sugar
- ½ cup water
- Skewers (wooden sticks)
Instructions
1. Prep the fruit
Wash and dry the fruit completely, then thread it onto the skewers.
2. Make the sugar syrup
In a saucepan, combine sugar and water over medium heat. Do not stir once it starts boiling—just let it cook.
3. Heat to hard crack stage
Let the syrup reach about 300°F. If you don’t have a candy thermometer, drop a bit into cold water—it should harden instantly and snap.
4. Coat the fruit
Quickly dip each skewer into the syrup, turning to coat evenly.
5. Let it harden
Place on parchment paper or a lightly oiled surface. The coating will harden within seconds into a glassy shell, then you can enjoy!
